Ingredients

For the vodka strawberries: 100ml vodka, 1 tbsp sugar, 1 tsp vanilla bean paste, 400g strawberries, quartered and pricked all over with a fork

For the biscuit base: butter for greasing, 300g biscuits, such as digestive biscuits, pinch of salt, ½ tsp cinnamon, 150g unsalted butter, melted

For the cheesecake filling: 500g curd, 375ml cream, 1 lemon, juice and zest only, 200g sugar, 1 tsp vanilla bean paste, 50g flour, 5 eggs, beaten

To decorate: 100g strawberry jam, 200g strawberries, whipped cream to serve
